I hated peas growing up. I thought they were revolting. Little green balls of disgust.
But now, now I LOVE peas.
This is a simple dish. A way to enhance peas and make them the best that anyone could love. A can or bag of frozen peas is transformed into deliciously tender peas simmered in butter and shallots and then lovingly tossed with crisp and smoky bacon.
It’s impossible to not like these.
