Peas with Bacon & Shallots

I hated peas growing up. I thought they were revolting. Little green balls of disgust.

But now, now I LOVE peas.

This is a simple dish. A way to enhance peas and make them the best that anyone could love. A can or bag of frozen peas is transformed into deliciously tender peas simmered in butter and shallots and then lovingly tossed with crisp and smoky bacon.

It’s impossible to not like these.

I normally make this dish when I'm also making my Bacon Gravy recipe. However, if you don't plan on gravy, just start with 4 pieces of bacon, remove the bacon and cook everything in the bacon fat.

  1. In a medium pot, heat the oil until shimmery. Add in the shallot and smashed garlic. Season with salt and pepper. Stir it all and cook until the shallots are softened. Add the peas in and stir to combine. Add in the stock and season with salt and pepper. Bring to a boil and reduce the heat to a simmer. Let the peas cook, covered for about 10 minutes and then uncovered for another 5– 10 minutes. You want most of the liquid to be absorbed. Turn off the heat and stir in the bacon. Serve.
